Believe it or not, a true Greek salad (horiatiki) almost never contains lettuce. Horiatiki is traditionally a summer dish, and Greeks eat very seasonally. Lettuce in Greece only grows in the winter months. If you want an authentic Greek salad, make yours with tomatoes (in big chunks), cucumbers (peeled), sweet red onion, bell peppers, and kalamata olives—with the pits! Top with a thick slab of feta cheese, dried Greek oregano, extra virgin olive oil, and salt. Pair with a crisp Greek white wine such as Assyrtiko and you’ll be transported to a sunny Greek island in no time.
