True vanilla is extracted from the vanilla “bean,” technically the pod of a vanilla orchid (Vanilla planifolia). The orchid is native to Mexico and parts of Central and South America, where the tiny Melipona bee evolved to pollinate the orchid flower. Vanilla is now produced around the world in tropical areas such as Madagascar, Tahiti, and Indonesia, where the orchids are pollinated by hand. After being harvested, the green vanilla pods are cured, giving them their characteristic brown color. Strictly speaking, wine does not have vanilla flavors. But it may have vanillin flavors. Vanillin is an organic compound called a phenolic aldehyde found in, for example, the fibers of oak trees and present in new oak barrels. Vanillin tastes a lot like vanilla, which is why we often use the terms interchangeably.
