Well before classification systems were established in Bordeaux and Burgundy during the 1700s, the best plots in Hungary’s Tokaj-Hegyalja region (Tokaj for short) were already being designated First, Second, or Third class. Strict royal decrees kept vineyard and winemaking practices at very high levels. The resulting wine, Tokaji Aszú, was considered one of the most sought-after wines in the world. February 1 is International Furmint Day, a celebration of the main grape used to make this coveted wine.
