Within the German wine classification system, Auslese—meaning “select harvest”—is used to describe a wine made from very ripe grapes. Trocken is the driest, followed by Kabinett, then Spätlese. The Prädikatswein system, as it is called, was started in 1971 as a way to indicate quality. Since Germany has a very cold climate in which grapes often struggle to ripen, this system was created with the idea in mind that higher ripeness meant higher quality.
