The American white oak tree (Quercus alba) needs to mature slowly, for at least 80 years, in order to develop the tight grain necessary for a good oak wine barrel. While this may seem like a long time, American oak trees mature far more quickly than French oak trees, which are generally harvested at about 170 years of age. Both species of oak tree grow in cold climates—and therefore grow slowly. But one of the reasons American oak costs less than French oak is because the American oak tree matures in half the time.
