A coffee bean is the seed of a red cherry-like fruit. Often the coffee cherry has two seeds. When the ripe cherries are harvested, the seeds are extracted. Ultimately these will be roasted—either lightly or intensely, giving the final coffee its distinctive aroma and taste.
